From The Bob Dylan Encyclopedia by Michael Gray:

Interviews and the myth of their rarity  It’s always been a myth that Dylan interviews are rare: they average about one a month for all four and a half decades of his career.  That’s something over 500 interviews and press conferences given, written up and published, and in many cases recorded and/or broadcast or telecast.  And since the mid-1960s almost every one is published prefaced by the claim that it comes from a man who rarely gives interviews.
