Recipe: Scallion Biscuits

In one of the recent Top Chef Masters episodes, a chef added what seemed like, basically, a garnish to her dish. She called them “scallion biscuits,” and the judges went ape-shit for them.

Biscuits with scallions in them, I thought. Hell, I can do that.

So here’s my take, totally NOT from scratch, therefore quick and ridiculously easy to make:

  • 2¼ cups of Bisquik
  • a few shakes of ground black pepper
  • ground cayenne pepper (optional)
  • a dash of salt
  • green scallions, chopped finely

Mix above ingredients together well. Smash out all of the flour lumps. And, remember, a little cayenne pepper goes a long way; it’s just in here for a hint of a kick.

  • 2/3 cup of milk

Mix the milk into the flour mixture. No kneading necessary.

Preheat the oven to 450 degrees. Drop the biscuit mix onto an ungreased cookie sheet in small mounds about the size of a cherry tomato – this makes little biscuits the size of one or two bites.

Bake for 8-10 minutes; 8-12 if you make larger biscuits.

They are great alone, buttered, with jam, with dinner, on the run. Maybe even with some cheese mixed into the batter.

    I make this with bacon bits added..yummy!
